Roasted cacao nibs are the heart of chocolate. The nibs are derived from the process of winnowing in which the bean is crushed and separated from its shell. Of special note is that they are not all created equal. Most nibs on the market are from low quality or even un-fermented cacao beans. If chocolate were made from these nibs it would not be a pleasant experience.
