Certifiably Organic
As many of you know, I already use organic cane sugar, organic cocoa butter and with the exception of a few bean sources, use organic certified cacao. I held off on certification of our chocolate for a variety of reasons. Mainly, I didn’t want to pass on the opportunity to purchase cacao from a small farmer who grew organically, yet could not afford the certification. Also, as a small-batch artisan chocolate maker, I feared the whole cocoa commodity market and really had no idea how I was going to source directly and even more so, organically. It’s a big world dominated by large producers and I just didn’t know what to expect. Well, here I am with a great source of organic certified cacao that is the best I’ve seen and I can source direct. So off I go! Follow along on the process and I’ll keep you posted when it’s official!
