Welcome to Notes from the Chocolate Maker. I’m David Mason, the founder and chief chocolate maker of Black Mountain Chocolate. We are a small family owned business located in the Swannanoa Valley, just outside of Black Mountain, NC. My wife Sarah and I started the business back in 2007, with the intent on bringing people closer to the source of their chocolate. What we’ve found is that for the most part, people are largely unaware of the work that not only goes into making chocolate, but also the work by the farmers that goes into producing the high quality cacao from which we make our chocolate.

I will admit that I was one of those people not too long ago. I literally thought that to make chocolate, you just mixed cocoa powder with milk and there you had it. I had no idea how cocoa was grown or where for that matter. Once I did, I became intrigued to learn more and as I dug deeper it became just as much a purpose as it did a passion. I intend to use this blog to express my opinions on the chocolate world, my chocolate making experiences and various subjects in and around chocolate.
